Book Review: A must for all bread lovers

I received this book a few weeks ago and I could not wait to start baking. This is not only a recipe book. The author provides the background to the flours used by the bakers mentioned in the book. I have tried a couple of the recipes from the book. The 16 hour bread was amazing. I baked another batch as soon as I finished the first one. A must for bread lovers and bakers.
