In addition, our church holds a pot luck each week after the service, so I need a selection of good casseroles to choose from. I saw this cookbook at the library today, sat down and read most of the first chapter, took it home, made a casserole (Hoppin John to use up some Easter ham) and then ordered the book. It really is that good -- all the recipes have been worked out and thoroughly explained. If you have ever had a disappointing experience with a recipe, you will appreciate the format of this book: Cook's Illustrated has tested, refined and retested every recipe to make sure it will really work for you. The directions are clear and most of the recipes in the first chapter have instructions on how to make the casserole ahead, freeze or refrigerate it and bake it later. And since these casseroles use pasta, rice or another carbohydrate in addition to meat or protein item, your food budget will stretch a little farther. I really like that it doesn't rely on prepackaged items from the grocery, which are both expensive and not terribly healthy.
