What I like most in this book is the explanation why may overweight and obese people have such a hard time trying to lose some weight. The cause is a slowdown of their metabolism.
The hormone insulin is secreted in large quantity by the pancreas each time we eat more calories than we can burn. Insulin is a storage hormone and more insulin stores the excess of calories faster. It is all written in our genes! We are programmed to store an excessive food intake as fat and we are programmed to do it as fast as possible. It is the result of natural selection acting on our ancestors when food was scarce and survival depended on the capacity to store calories under the form of fat during the brief periods of food abundance. To protect its storage of fat, insulin also slows down our metabolism. A sustained high insulin secretion puts us in storage-only mode.
Nowadays however, the problem is no longer food scarcity. It is rather its abundance. Continually exposed to this abundance and still programmed as we are we tend to stay in storage-only mode and become overweight and obese. The excess of calories is one of the seven deadly sins distorting the American diet into a recipe for disaster
The problem is exacerbated by the fact that sugar and starch intake is the most potent trigger of insulin secretion. To solve the problem, the author presents her "Metabolic Switch". It is a system of "alternating diets that first stimulate your metabolism and then encourage fat-burning"
