Book Review: A must for Gluten-Free Bread Baking

Trust me on this: If you don't have a bread machine, buy a Zojirushi BBCCX20 Home Bakery Supreme Bread Machine, and combine the order with this book. You won't be sorry.
I put off buying a bread machine for ages because, as an avid baker, I didn't think I needed one, but my efforts at gluten-free bread baking began to wear me down. I bought more oven thermometers to make sure my oven was accurately baking the bread. I bought instant read thermometers to make sure my milk or water was at the correct temperature. I measured and weighed and measured again, but no matter my efforts and despite my experience level, my bread baking was inconsistent. Was it rising too fast? Did I need a cooler/warmer place for it to rise? Was I beating it too vigorously with my Kitchen Aid? or for too long? Was it too humid in the kitchen, or too dry? Nine months of bread baking and experimenting had almost broken me, but my daughter did not want to live the gluten-free diet bread-free, so I read reviews, ordered a Zojirushi Bread Machine and bought Gluten-Free Baking Classics for the Bread Machine.
One reviewer stated that one tenth of the book revolved around how to set the Zojirushi. Curious, because my copy of the book had only one page of detailed and easy-to-follow directions for programming the machine(p. 15). This programming ability is why the Zojirushi is so highly prized.
My results on the first loaf were very good, but sometimes I got lucky baking the old fashioned way, too. The second loaf was also great. Then I was three for three. Folks, Annalise G. Roberts has done the science and the math. She has given us the recipe for a perfect loaf of bread every time. I do not have to guess at anything anymore, and the bread machine provides a constant environment. There is no more guess work.
Now a word about the recipes. I have cookbooks that I keep on the shelf even though I make only one or two recipes from them. This is a slim volume, which I actually appreciate because I have room for it, but I guarantee I will make each and every recipe in it. I love that there are variations on the recipes, too, including seeds, fruits, nuts, and other whole grain flours. I have only baked a few recipes so far, because my family keeps requesting the Pecan Sandwich Bread.
It is trite to say this, but it is so true, do yourself a favor and buy this book. Yes, and buy the Zojirushi too. Just because you have to eat gluten-free doesn't mean you don't deserve consistently delicious bread.
