Book Review: A bit better than average but not expecially cast iron
Summary: 3 Stars
I was a little disappointed as the supplementary material was pretty good but there were no really "cast Iron" recipes that depend on or really take advantage or cast iron's special characteristics; well the skillet corn bread. While the recipes were variable from dubious (Koriean short ribs, casoulet) to very good and generally fall into the comfort food zone some were a little weird. But the Mac and Cheese was very good as was the Italian meat loaf (looks like a big rectangular thick hamburger) but tastes great as does the skillet corn bread. As I said the recipes could as well be cooked in Corning Ware, Stainless or pretty much anything else.
NB I have had more cassoulet languedoc in France than the other verities; but it seems to me that the duck confit or confit de Oie(goose)is added to allow doubling the price of the cassoulet to tourists (non-locals) than because it really adds much but its a matter of taste.
If you are looking for camp coking or campfire recipes these aren't those.
