Summary: 5 Stars
This is a great basic learning book for those studying to be a chef, and would provide interesting reading for home cooks too (but you have to be really interested or you might find it a bit boring!). Introduces knife skills well and discusses the essentials of selecting and looking after professional knives. I've leant my copy to several junior chefs and it has greatly improved their respect towards their knives - good buy!
