I've been a fan of Mr. Lahey's marvelously simple and virtually foolproof method of baking country bread ever since reading about him in Mark Bittman's food column in the New York Times. As a hobbyist bread-maker, I was never satisfied with what I could produce in a home oven, and the difficulties of sourdough were often discouraging. Along came Mr. Lahey's ceramic or iron pot method of baking bread, with its overnight rise, no kneading and minimal quantities of yeast, and truly excellent bread was suddenly within the grasp of the home baker. Mr. Lahey's method deserves to be called revolutionary. In fact, he's a hero to bakers everywhere, and his new book, "My Bread, The Revolutionary No-Work, No-Knead Method" is a watershed in the overcrowded field of books on baking. Like his method, its simple, concise, and tells you exactly what you need to know to produce superb loaves of bread. Even for those already familiar with his method, "My Bread" greatly expands the possibilities of iron/ceramic pot baking. Highly recommended.
