everything you need to know about baking/pastry. from cookies, muffins, tarts, pies, scones, creme angalise, pate a choux, pastry cream, literally any recipe you need will be in here. all recipes turn out and have been impressive. The book is heavy and thick, lots of info gives you information on each topic and recipes to go with it.
my favorite pie recipe is in it too, "Maple Walnut Pie". tons of recipes and knowledge
Went to baking/pastry arts school and this is the book we used, worth the buy.
