Book Review: A Desert Island Cookbook for Baking Enthusiasts

With so many cookbooks--and now that baking is enjoying a revival of sorts--it's not easy to create a new cookbook of any kind that'll be a new classic. Rose's Amazing Cakes, however, not only lives up to its name, it is just that--a new classic.

Rose is famous for her watershed cake cookbook that is what the title says, The Cake Bible. To top that iconic book seems unlikely--and remains to be seen. But Rose's Heavenly Cakes includes gorgeous photos of impressive cake after cake. For a baking fan, it's hard to know where to start.

These recipes aren't for anyone who feels more comfortable with baking mixes, or simply baking homemade cookies. Rose carefully writes out the directions, ingredients and techniques in detail, often with essential information spread out so no critical piece is missing. This means you have to read the pages of recipe at least once-through and thoroughly. You'll also want to make a list of ingredients and check it again to make sure you don't miss something.

This recipe writing style may seem tedious to read, but it takes out much of the guesswork and prevents inadvertent changes that may affect the final cake. I find Rose's style refreshing and an enjoyable read whether I make the recipes or not.

I've made the following recipes:

Woody's Lemon Luxury Cake (the frosting is absolutely delicious, but the cake a bit disappointing)

Apple Cinnamon Crumb Cake (p. 48 very moist, coffee cake style that is quick and foolproof)

Individual Pineapple Upside Down Cakes (cute minicakes, good but not a hugely different from any Pineapple Upside Down cake)

Lemon Meringue Cake (pg. 205 took hours to make, it does taste like lemon meringue but a lemon meringue pie is much faster, easier to make. Still a fun, challenging cake with delicious results).

The "White Chocolate Deluxe Buttercream" is so incredibly delicious. I daydream about it, even though I pay about $10 in ingredients just to enjoy the sublime vanilla bean flavor from the recommended Green and Black's white chocolate bars (with cocoa butter). It's worth it.

So many incredible cakes, I haven't even made a dent in this book yet. One reason is that you need to set aside an afternoon and 3+ hours to make many of these cakes/frosting, allowing for things like getting the butter or eggs to room temp where noted. Unlike many homeruns when I use Baking with Julia Savor the Joys of Baking with America's Best Bakers or the consistently excellent results for my favorites from The New best of BetterBaking.com: 175 Classic Recipes from the Beloved Baker's Website, I don't feel 100% successful with every recipe I tried, but the results are good overall.

Even so, Rose's Amazing Cakes is a treasure trove.
