Book Review: Great ways to lighten up Cook's recipes

Cook's Illustrated and America's Test Kitchen are all about taste, texture, and a fabulous finished product. As a result, many of their recipes don't skimp on the high-quality, often high-fat and high-calorie ingredients that make their recipes so good.
The Best Light Recipe, however, does a great job of cutting the calories and fat out of some of their favorites. It's definitely not a diet cookbook; but it is a great way to get some fabulous recipes that are lighter than the orginals.
My family loves their vegetarian chili as much as their beef chili from The New Best Recipe. Ditto to the cornbread that we always serve with the chili. The oven-fried fish is also delicious, as is the guacamole.
I like that they don't even bother to create light versions of things that just can't be light--like pie crust. If lightening up a recipe means significantly reducing taste and texture and quality, then it's just not worth it to me.
I'd recommend this book to anyone who is addicted to Cook's other books but wants to cut out some fat and calories when possible.
