Book Review: Hands down, the best cookbook on Spain

I am not a fan of hyperbole, but in this case, I believe I am justified in saying that "The New Spanish Table" is far and away the best book on Spanish cuisine. As a long-time resident of Barcelona, Spain, I am skeptical of most new entries onto the Spanish cookbook scene. I subject every book to a battery of tests, such as what their recipe for a real tortilla espa?ola is and whether they get the Spanish titles for their recipes absolutely correct. In this case, Anya Von Bremzen has outdone herself with an excellent blend of stylish, avant-garde recipes by the likes of superchef Ferran Adri?, mixed with homey, traditional recipes that form the backbone of the Spanish repertoire, such as caldo gallego and good old gazpacho.
But what makes her book really shine are the vignettes and stories that are sprinkled throughout the book. She will tell you about the origins of olive oil, what makes a great jam?n, why the Catalans are mad about salt cod (bacalao), what it's like to shop in La Boquer?a, Barcelona's largest and most stunning food market, what's in Juan Mari Arzak's home refrigerator (not much more than bottled water and some foie gras) and a hundred other little things that make Spain come alive to the avid cook and the browsing reader alike.
This book should be your first choice if you are looking to perfect your Spanish cooking or if you are just getting started on the cuisines of Spain. It has something for everyone.
