Book Review: A Great Book with Occasional Lapses in Editing
Summary: 4 Stars

James Petersen is something of a culinary God, and this is a wonderful reference work. Even if you're an experienced cook, you will definitely have some "oh, *that's* the best way to do it!" moments when looking through this book. I've been the family cook for years, and I'm getting plenty out of it - took it out from the library and am definitely going to buy it. The thing that made this book stand out from other "tips and tricks" book for me was that it includes things like guidelines for making pan sauces from a variety of ingredients, and making quick dishes with chicken. In other words, in addition to the tips, you get some more open-ended advice for exploring on your own.

My only quibble(hence 4 stars) is that some of the entries are marred by poor editing. For example, the entry on "How to Use a Mandolin" doesn't tell you how to use one, only what it is. I'm sure that if someone had pointed this out to Mr. Petersen, he would have revised it. Workman (the publisher) strikes again! On the bright side, it looks sturdily put together, unlike most Workman titles, so you won't end up fishing the pages off the kitchen floor when the binding falls apart.
